There are some minor types but these three constitute the majoroity of tea consumed today. \u003c\/p\u003e\n\u003ch2\u003eGreen Tea\u003c\/h2\u003e\n\u003cp\u003eIn essence green tea has not undergone full oxidation and withering like their cousins black and oolong teas.\u003c\/p\u003e\u003cbr\u003e \u003cp style=\"display: block\"\u003eThis particulart type has been written about extensively for its history as well as health benefits. \u003c\/p\u003eSince the oxidationb process is less than black or oolongs many of the benefitial chemicals are not degraded and remain to be sonsumed by us. It will have a very light color, and steeping green teas to hot or to long will cause the release of excessive amounts of tannins, the chemical resposible for a teas bitter taste. Optimal green tea steeping temperatures can range from 142 F to 189 F with a infusion time of around 3-4 minutes at most.\n\u003cp\u003eIn vouge now is a variety of green tea called Matcha Green Tea and is unique to Japan. In this method of tea processing, the plants are actually shaded 3-4 weeks prior to harvest. The stems and veins are removed at the start of processing rather than at the end. The leaves are ground, very slowly to reduce heat during the process, into a powder, and finally graded, with ceremonial grade being the best of the best. Traditional preparation involves putting the powder into a bowl, adding water, and then whisking. The entire leaf is consumed rather than just allowing a steeping of leaves to occur.\u003c\/p\u003e\n\u003cp\u003eThough no formal grading process exists for green teas some of the common \"grades\" we will see on the market are:\u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003eGunpowder - tightly rolled leaves into tight pellets which unfurl in the cup\u003c\/li\u003e\n\u003cli\u003eImperial - loosely rolled pellets\u003c\/li\u003e\n\u003cli\u003eYoung Hyson - leaves rolled long and thin\u003c\/li\u003e\n\u003c\/ul\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eGreen tea is meant to deliver a light colored yet flavorful brew, it will not have the body as full as a black tea but will deliver a very refreshing and satisfying infusion.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eOolong Tea\u003c\/p\u003e\n\u003cp\u003eOolong is typically referred to as a partially oxidized tea. It lies somewher between the lighly oxidized green teas and the fully oxidized black teas. It will have more body and a darker color than the green teas. This type of tea originated in China and order of processing steps and growing conditions can impart widely differing flavors to even this variey of tea. Oolong has been made in both the Darjeeling and Assam regions of India. Chinese developed processing methods are used in this region to yield these Indian varieties of oolong tea. As with green tea there is no formal grading system in place and it is often described by the region where it has been grown.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eBlack Tea\u003c\/p\u003e\n\u003cp\u003eThe black teas are oxidized even longer than their cousins green and oolong teas. Due to the long oxidation time, this tea will be much darker in the cup and can look almost red depending on the processesing method. It will retain its flavor for several years much longer than green teas. The two processing methods of black teas are orthodox and CTC (Cut, Curl, Tear). The orthodox method involves hand or mechanically rolling of the withered tea leaves. Where the CTC method involves cutting and partially crushing the leaves in the curling process. Once processed the leaves are sorted into grades.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eGrading Black Tea Leaves\u003c\/p\u003e\n\u003cp\u003eBlack Teas are generally graded as either Orange Pekoe, Fanning, or Dust.\u003c\/p\u003e\n\u003cp\u003eOrange Pekoe - highest grade and is whole leaf tea\u003c\/p\u003e\n\u003cp\u003eBroken Orange Pekoe (BOP) - next highest graded tea under OP, and has broken leafs of varying sizes.\u003c\/p\u003e\n\u003cp\u003eFanning (F) - grade below BOP, and has broken leaves about the size of a pin head\u003c\/p\u003e\n\u003cp\u003eDust (D) - This is what is left over after OP, BOP, and F are sorted from a harvest. Sometimes called sweepings and is available only in tea bags due to the small size.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eWithin each of these categories there are further grades. These are not uniform across the globe and will vary slightly within each tea producing nation.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eThis covers the majority of tea but some other varieties have become popular in the last few years. Both Yellow and white have gained significant availability and popularity based reputation of their health benefits.\u003c\/p\u003e\n\u003cp\u003eYellow Tea - this process allows the oxidation to proceed even slower than a green tea and gives the tea a more mellow flavor compared to the green tea. This process causes a slight yellow hue to the leaves during the drying phase. It is more costly to purchase this tea.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eWhite Tea - this typically involves picking immature leaves and some buds on the tea shrub and almost no oxidation occurs through the processing of these leaves. It is the silvery white hairs on the immature buds picked that give rise to the name, white tea.
