Tapioca Flour or Stach is produced from the Cassa Roots. This plant is found mainly in Brazil, Nigeria, and southeast Asia. These roots must be properly prepared to a eliminate a cyanide product that occurs naturally within the root. To remove this from cassava roots a simple but thorough grinding must be done. This dgrinding ruptures cell structure to release an enzyme that will render alll cyanide components safe. Once this is done that starch is removed from the Cassava roots and then dried and ground into a fine particles that becomes Tapioca Flour or Starch.
